A St. Paddy’s Day treat: Get your Guinness Fix

St Patrick’s Day is nearly here, which means many of us will be heading out to the LCBO. Though Guinness is an ever-popular choice at this time of year, it can be an acquired taste.

If you want to participate in the Guinness-themed festivities this weekend, but prefer not to drink the brew as it is, consider cooking or baking with the beer, or else mixing it into a drink. It’s also worth noting that the alcohol will burn off if you use Guinness to cook or bake, so don’t hesitate to share with friends who are uninclined to drink!

Read on for a couple suggestions on how to enjoy your Guinness this weekend – you don’t even have to be Irish!

Guinness Cupcakes

Serving: Yields 24 cupcakes

Ingredients:

  • ¾ cup of cocoa powder
  • 2 cups of sugar
  • 2 cups of flour
  • 1 tsp of baking soda
  • 1 pinch of salt
  • 1 ½ cups of Guinness (or a 12oz bottle)
  • ½ cup of butter
  • 3 eggs
  • ¾ cup of Greek yogurt

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit and line cupcake tins.
  2. In a medium mixing bowl, combine cocoa powder, sugar, flour, baking soda and salt. Set aside.
  3. Melt butter in the microwave, and then pour into a larger bowl with the Guinness. Beat in the eggs, then the yogurt.
  4. Pour into prepared cupcake tins and bake for 12 – 15 minutes, or until they rise and set in the middle.

  5. Ice with buttercream or cream cheese frosting, or try whipped cream.

These cupcakes turned out really yummy! The Guinness flavour was extremely subtle, and if you hadn’t been warned you could easily enjoy one without recognizing the taste of Guinness. Instead, it complements the cocoa really well and provides a rich chocolate flavour. The Greek yogurt also made these cupcakes extremely moist without being too crumbly. These should keep for a few days on the counter or about a week in the fridge.

Guinness Float

Ingredients:

  • 1 Guinness
  • 2-3 scoops of coffee flavoured ice cream
  • Whipped cream
  • Chocolate syrup
  • Salty peanuts

Instructions:

  1. Pour your beer into a large glass and add a few scoops of ice cream.
  2. Top with whipped cream, chocolate syrup and a handful of salted peanuts. Feel free to adjust the toppings to what you like or have on hand.
  3. Enjoy!

This is a great option for folks who already like the taste of Guinness, but are looking for something a little special for the weekend. The coffee taste brings out the sweetness in the drink and eliminates some of the bitterness of the beer, but the taste of Guinness certainly comes through.

The peanuts are great to complete an “Irish pub” theme. This drink is a great option for enjoying the pub night atmosphere from the comfort of your own home.
