A tasty, rich dessert for under 100 calories? These blondies pack sweetness, gooeyness and a buttery taste—so much so that you’d never guess the secret ingredient is chickpeas. Each square is packed with protein and perfect for vegans. What’s best is that the blender does all the work for you.
Ingredients
1 can of chickpeas
3/4 tsp. baking powder
1/8 tsp. baking soda
1/4 tsp. salt
3/4 cup brown sugar
2 tsp. vanilla extract
1/4 cup quick oats
1/4 cup peanut butter
1/2 cup chocolate chips
Directions
Preheat oven to 350 degrees.
Blend all ingredients (except chocolate chips) until very smooth in a food processor; I added 1 tbsp. of water to make it blend easier.
Mix in chips, and scoop into a greased 8×8 pan. Top with some more chocolate chips.
Bake for around 30 minutes.
